It was time to get cooking with the Koken met aanbiedingen app and as the weather is still very summery I thought I’d make this wonderful super tasty Thai Beef Salad. Why? Because I am also fan of the Thai cuisine and every now and then we crave a heavier lunch on the weekends. Not too heavy though, so this salad is perfect. If you add some freshly baked bread to it, you’d have a nice light dinner meal. Sounds good he? And its not too difficult either. When I tasted it, it brought me back straight to my holiday on Thailand about 5 years ago. How I wish I could go there with the BF and the mini!
Recipe for Thai Beef salad
~ Serves 4
400 gr steak at room temperature
Salt and pepper
1 Chili peper
1 clove of garlic – grated
2 full TBsp sugar
2 TBsp Fish sauce
2 TBsp Lime juice
2 TBsp warm water
1 small red onion – sliced in rings
15 cherry tomatoes – halved
Half a cucumber – sliced
75 gr rucola
6 coriander stalks – leafs only
1 tsp sesame seeds – roasted
Grill the meat and let it rest for 3 minutes.
Season with salt and pepper and cut up in to thin strips.
Make a dressing by mixing chili pepper, sugar, lime juice, fish sauce, garlic and water. Be sure all sugar has dissolved.
Mix the rucola lettuce with tomatoes, cucumbers, red onion and coriander leafs.
Add in 4 TBsp of dressing and mix the salad well.
Divide the salad over four plates and top with the grilled meat.
Sprinkle some sesame seeds and add more dressing if you like.
If you add some freshly baked bread you’ll have a complete meal.
