Me and foodie friend J decided to combine work with pleasure. We both had some stuff to work on before going to the book launch of Menno de Koning. Yess, he is the guy who won the Dutch program called Heel Holland Bakt.

But we go back to the Scrambled eggs. We decided we’d work at Coffee and Coconuts, a super cool spot, where you can work and have lunch or just sit and enjoy the good vibe. We sat down, enjoyed the nice atmosphere and got the menu to decide what to have. After ordering some fresh coconuts (OMG these are the best..nothing beats a fresh coconut), we knew what we wanted for lunch. I was having scrambled eggs and J was having a hot dog.

I was absolutely in love with these scrambled eggs, so I am sharing my version of this recipe with you guys too. Hope you like! I promised the waiter I’d give them his name, so here we go..Oh and they are perfect to surprise your loved ones on Valentines day. Its just something else..seriously 😉

Culinessa Scrambled eggs

Recipe for Robin’s Scrambled Eggs at Coffee and Coconuts

~ 1 person
2 Eggs
1 tsp of Miso paste
20 ml Milk
Half an Avocado
2 slices of bread
1 Sprig of thyme
1 TBsp Feta cheese
4 Black olives – pitted

In a bowl, whisk milk, eggs and miso paste till combined.

Slice the olives.
Mash your avocado.
Toast your bread.
In a pan, add some butter and scramble your eggs.
Now assemble by adding some avocado on your toasted bread, lay the eggs on top and sprinkle with the feta and olives.
Last but not least, add the little leaves from the thyme on your plate.

And that’s that peeps! Easy does it!
