So some things bring you back to when you were very little immediately right? Well thats the case when I landed on the beautiful island of Curacao. We got welcomed with a Pastechi and Empana and had to wash it down with something to drink. My grandmother told me that she had made us some Tamarind Syrup so if I wanted, I could have a go at it!

I had a sip and man it was ice cold, not too sweet and so refreshing and brought me back to my child hood. Whenever my grandmother would make this, she always used the Fresh Tamarind and made the syrup with this. After that she gave us the remains of the tamarind and we ate it like it was candy. I asked my grandmother to teach me how to make this and today I share it with you! Let me know how yours turned out.

Recipe for Tamarind Syrup ~ 2 liters
Tamarind Pods 600 gr
Sugar 1.8 kg
Water 625 gr

You first start with removing the hard shells from the tamarind pods and let them dry for a day or two.
Now you add the sugar and water in a pot, stir every now and then and bring to boil.
Make sure all of the sugar has dissolved.
When the sugar water starts boiling, you add in the “dried” tamarind.
Turn to low heat and let it simmer for 2 minutes.
If the sugar starts to crystalize just add in some more water and boil until completely smooth.
Time to turn of the heat and let it sit for a day to get a nice tamarind syrup.
Strain the tamarind through a sieve and put in a bottle.
To make the drink and depending on your sweet tooth, just add a little bit of the syrup and add in some ice cold water.
Stir and taste. If it needs a bit more sweetness, add some more.
Serve with some ice cubes and enjoy!
