As I mentioned the other day, I got to taste the new menu from Vinnies Deli. One of the dishes that stuck to my mind was the shakshuka. It was so soft and mild and normally not my thing, but this one was a winner. We got spoiled and they shared their recipe with us and I could not wait to make it. We even got a super goodiebag with all of the ingredients to make it at home. Nothing could stop me now 😉

Being me I tasted the dish and tweaked it a little to my own liking. What was most important was keeping it mild and light so you could have this for breakfast. Normally I have the BF taste with me, but as he was away I bothered my upstairs neighbour and asked him to be my test panel. At first he said, I don’t know if I am up for a dish this early in the morning, but I will sure give it a go.

s I’ve made this dish a number of times before, it always kept me thinking who’d be eating such a heavy dish for breakfast? This recipe and style was a nice welcome. Hope you’ll like it just as much.

Poaching eggs
Its such a stressy thing to do, right? Ha, well not anymore! Never again by using this little trick here.

To poach the eggs, I use a little bowl/ramekin and put a square of heat resistant cling film, baste it with some mild olive oil and drop the inside of 1 egg, close it and make a knot in it and I drop it in boiling water and let it cook for about a minute or 3 and place in a bowl with ice cold water. They are now good to go!

Recipe for Shakshuka with a poached egg

~4 people
2 big sweet pointed peppers
1 onion
1 clove of garlic
1 tsp ground sweet red pepper
1 tsp ground cumin
1/2 tsp ground cayenne pepper
450 gr pealed tomatoes (1 can)
Salt and pepper
200 ml water
2 tsp sugar
150 gr feta
4 eggs
Handful of Coriander

Finely chop the sweet pointed peppers and onions.

Crush the garlic and chop up the coriander.
In a pan, heat up some oil and add in the onions and red peppers on medium heat. 
Cook for about 10 minutes till they’ve become nice and soft. 
Add in the crushed garlic and stir for about a minute or 2.
Now add sweet red pepper, cumin and cayenne pepper and cook for another minute. 
Now add sweet red pepper, cumin and cayenne pepper and cook for another minute. 
Add in tomatoes and season with 1 tsp of salt and some pepper.
Add in water and let it simmer till you get a nice thick substance.
Taste and season some more to your liking.

Now its time to poach the eggs. (see method above)
Divide the mixture in 4 and serve in a bowl and add some shredded feta.
Add the poached egg on top.

Sprinkle with some salt and pepper and coriander.
I love to have it with some toasted bread or even with a cracker.
