Easter recipe: scrambled eggs with truffle and shrimps
As easter is around the corner, I already shared with you guys a recipe for a beautiful Mango Lassi. During easter we always try to get together with the family and share good times together. This year I wanted to put things on the table no one would expect and spoil my family rotten.
Today, I share with you a recipe that to me seems like a perfect one. Its perfect to have during brunch, lunch or even as an entree during dinner. As I am a sucker for eggs (fried, poached, scrambled or omelets); my dad thought me how to make the best omelet ever and that recipe inspired me to combine shrimps with this dish too. I hope you like it just as much as I did.
Recipe for scrambled eggs with truffle and shrimps
8 TBsp Milk
2 tsp Truffle sauce (salsa tartufata)
Salt and pepper
8 tiger shrimps
Hand full Arugula
2 thick slices of bread
In a bowl whisk milk and eggs.
Toast your sliced of bread and cut in to 1.5 cm thick pieces.
Clean the shrimps and cook m with 1 tsp of butter.
Season with salt and pepper and set aside.
In another pan, add butter and scramble your eggs.
Season with salt and pepper.
Just at the end, at in the truffle sauce and mix everything well.
Divide the egg in to 4 portions.
Take 4 glasses and arrange some of the truffle scrambled eggs on the bottom, some arugula and 2 shrimps.
Serve on a plate with two slices of toasted bread.
