Just before Yvonne her book “Yvestown in de keuken” was launched, I had the chance to interview her about it. Due to the fact that Yvonne lives in Belgium, it made it a little difficult to do the interview in person, so we decided to go digital. On 23th of March, the day the cookbook was launched, I headed over to Sissy boy Homeland. It felt like a little BIG party the moment I walked in. I saw a nice big table being decorated with lots of cake and drinks. I spotted Yvonne and said hello… It was so nice to meet her in real life and see how proud she and everyone close around her were on a dream come true. Her own cook book that she and BFF Roel Vaessen from Ixxi created together with Publisher Snor. Nice to know, they’ll be publishing in the US in january 2015.

I love how the book is a reflection from Yvonne and her blog and her love for nice things. The book gives you a nice sneek peak in peoples kitchen, the story behind it and better yet their Favorite Recipes. Speaking of recipes, in the interview Yvonne talked about her favorite recipe from the book, so I am sharing it with you now.

Recipe for the Vegetarian Pizzas ~ 6 people
Ingredients
500 gr Wheat flour
1 tsp of yeast
1.5 tsp of salt
325 ml of warm water
1 TBsp of rapeseed oil.
Baking paper

Method for the dough
Mix wheat flour with yeast and salt in a bowl. Pour in the warm water and the rapeseed oil.

Kneed the dough for about 5-10 minutes till its nice and firm but smooth on the outside. The dough might be sticky in the beginning, but don’t add too much flour while kneading. This way, you keep it nice and firm.
After 5 minutes you notice that the dough is less moist. Sprinkle with some flour and put aside in a bowl.
Cover your bowl with a damped cloth and put away for 2 to 3 hours so the dough can rise.
Flour your cooking surface and make your pizzas in the desired size.

Pizza with Artichokes
2 onions
2 cloves of garlic
olive oil
1 can of artichokes
150 gr of Gorgonzola cheese
4 sprigs of rosemary
salt and pepper

Method
Pre heat your oven to 180 C. Place the dough on a baking sheet on your baking tray.
In a pan lightly fry your onions and garlic in a bit of olive oil.
Cut up your artichokes and crumble your gorgonzola.
Now its time to put it all on your pizza dough and add the sprigs of rosemary.
Season with salt and pepper and drizzle with olive oil.
Bake in the oven for 25 minutes.

Pizza with Spinach
2 onions

2 cloves of garlic
300 gr fresh spinach leaves
Olive oil
150 gr of Pecorino grated

Method
Pre heat your oven to 180 C. Place the dough on a baking sheet on your baking tray.
In a pan lightly fry your onions and garlic in a bit of olive oil.
Chop up the spinach and add to the pan and cook shortly.
Now its time to put it all on your pizza dough.
Season with salt and pepper to taste and some drizzle some olive oil too.
Bake in the oven for 25 minutes.
