Its been quite a couple of busy days visiting family and friends that resulted in me having a bad cold at the moment. That’s why I’ve been a bit absent, but now I am back. Even though days are busy, you do want to put something nice and festive on the table. Even for snacking, right? So that got me thinking: how can I make something that is simple, yet delish and won’t take too much of my time. And then it hit me: I would be making festive cola meatballs! The boys from Koken met Aanbiedingen thought they’d be perfect for new years eve!

Recipe for festive cola meatballs

Ingredients
450 gr ground meat

1 medium onion
2 cloves of garlic
3 cm Ginger
3 TBsp Light soy sauce
1 can of Cola 0.33lt
1 spring onion
Black pepper
Salt
Olive oil

Method
Peal your onion and cut it up finely. Peal garlic and grate them. Slice up the ginger.

Make little meatballs from the ground meat. In a bowl mix ground meat together with onion, garlic (1 clove) and egg.
Season with salt and pepper. Make your balls the size of a little golfball.
Fry them up in hot oil till they are golden brown. You want your meat balls to be covered with oil for 1/4.
In another pan, you fry your garlic ( 1 clove) and ginger till they are translucent.
Add in the light soy sauce and 30 cl of cola.
Let it simmer for about 10 minutes till you get a nice thick sauce.
Cut up the spring onions and sprinkle on the meatballs.
Also nice if you sprinkle some toasted sesame seeds on top.

Perfect with a glass of rose champagne during the holidays!
