Simple Egg Salad
This egg salad brings me back to when I was a little girl. My mom would make us breakfast on a daily basis and sometimes I would get more exited than others when seeing what was on our plates. This specific egg salad was one of them. Its just so simple but delicious on a piece of fresh bread or when you have more time and you toast it. Delicious!
Recipe for Egg salad
6 Eggs – Hard boiled
8 TBsp Mayonnaise
Salt and pepper to taste
Finely chop up the hard boiled eggs and mix with mayo,
Season with salt and pepper and cut up the chives and serve on top.
Tip! You can add a drop of truffle oil to it and get a completely different sensation.
Other variations can be to add some spice and use a little bit of finely chopped scotch bonnet pepper OR some curry powder.
