Skinny omelette

Ever since I  bought my lodge cast iron pan, I’ve been obsessed with making breakfast for one. I keep thinking of new ideas and new omelettes to make in this little magic pan of mine. I’ve had classic sunny side ups, shakshuka, my dads classic and today I talk skinny omelette ;). I’ve decided to shake up my patterns a little bit. Wanting to loose some weight, but made the promise with myself that I still want to eat good and yummy food. I am and will always be a foodie, so saying goodbye to rice and pasta is a no go for me. That’s why I’ve decided to balance things. Healthy with delicious sounds like a good compromise right? I have no idea how long I will be able to stick to it, but I am sure going to do my very best. This omelette is a perfect way to get you in the same mood. I used the tomatoes from Tazed. The better the quality of the tomatoes the nicer the omelette. Bon Ap!

Recipe for a Skinny Omelette
~ 1 person

Ingredients
2 egg whites

2 cherry tomatoes
1/4 medium onion – finely sliced
Handful of spinach
1 tstp olive oil
salt and pepper

Method
Separate egg yolks from egg whites and keep egg whites in a bowl.

Whisk them a little bit.
Wash your cherry tomatoes and slice them in to 3.
Slice up your onions.
In a pan, heat up the olive oil and add in your onions and spinach and cook for about 1 minute.
Pour the egg whites on top.
Place your cherry tomatoes and cook till done.
Place a lid on the pan and steam your omelette.
Season with pepper and salt.
