I already blogged about the Vietnamese Fried chicken in another post and promised you guys part II of the adventure of Bloggerbabes cooking. Sesanne from the Lion Kitchen and I had a blast making these two recipes and we will be back with some more collabs.

So how did we come up with this one, well we both said we wanted to do something with roasted cauliflower. So that decision was made pretty fast. Next up was how can we keep it light, fresh and simple and even a little bit healthy? Well taraaa the idea of introducing some Vietnamese flavors was born.

Recipe for Vietnamese Cauliflower salad

~2ppl
Ingredients

1/2 Cauliflower – Chopped up

50 gr Carrots – Julliened
1/2 cucumber – grated
Handful Coriander leaves
Handful Thai Sweet Basil
50 gr Roasted peanuts
2 spring onions chopped up

Method
Roast the cauliflower and add to a bowl.

Add in the carrots and cucumber and mix wel.
Serve with the herbs and spring onion.
Sprinkle some roasted peanuts on top of the Vietnamese cauliflower salad and dress with the nuoc mam sauce.

Nuoc Mam dipping sauce

Ingredients

1 chili peper
1 clove of garlic
3 TBsp sugar
4 TBsp fish sauce
1 lime
5 TBsp warm water
[Optional: 1/2 tsp chili powder]

Method
First start with grinding the chili and sugar together and then add in the garlic.

In a little bowl combine fish sauce, lime juice, water and add in the chili sugar garlic mix.
Taste and add more flavor to your liking.
