I seriously am craving a bbq as I did not have home made bbq this year. I heard that is was going to be summer one last week, so that meant one last chance to have some bbq. No worries, this recipe can be made in your home too, just use a grilling pan instead!

Recipe for Spicy Corn, Mexican style

Ingredients
4 Corn on the cob

50 gr of butter – at room temperature
1 clove of garlic – crushed and chopped up fine
salt and pepper
1 TBsp Parmesan cheese – I used grated Parrano cheese
Chili powder

Bunch of Coriander leaves – chopped
1 Lime – sliced in to 4 wedges


Method
First start with combining your butter with garlic, season with salt and pepper and add the grated parmesan cheese.

Chop up your coriander.
Cook your corns. Drain and set aside.
Heat up your bbq or grill and grill until it becomes nice and charred. 
When done, add a nice dollop of butter on your corn. 
I always add some more grated cheese at this point, but that is optional.
Sprinkle some chili powder and top of with some coriander.
Serve with a lime wedge.

Great with some grilled fish or a steak!
