So I wanted to make a little festive snack and as I have a #nowaste challenge going on with myself (haha) I thought I’d make something out of the ingredients we have at home, in this case: hazelnuts, feta cheese, mint leaves and some puff pastry. It turned out in to this little beauty, come on don’t you agree? And it was delish too 😉 Pretty damn simple if you ask me and perfect to accompany that glass of wine you’ll be sipping on with this beautiful weather.

Recipe for 8 little feta snacks

Ingredients
Puff pastry – 2 sheets
8 mint leaves – finely chopped
Handful of hazelnuts – chopped
8 hazelnuts
Feta cheese – 35 grams – finely crumbled
Honey

Method
In a muffin tray, cut up 8 little squares of baking paper and put them in the muffin tray.
Cut up the puff pastry sheets in to 8 pieces. I first divide one sheet in 2 parts and then divide the 2 parts in 2 parts again.
Place them in the muffin tray on a piece of baking paper.
In a pan roast the hazelnuts and chop them up, but keep 8 hazelnuts aside for garnishing.
Crumble the feta and set aside in a bowl.
Add the chopped hazelnuts and the chopped up mint to the feta and mix well.
Scoop the feta mixture on to the puff pastry and drizzle some honey on top.
Finish off by adding one hazelnut in the middle.
Bake for about 15 minutes on 175 C.
If you like, you can add just one last drizzle of honey and serve!
