The popular pretzel bites
I posted a picture on Facebook the other day of me being proud of the pretzel bites I had just finished making. Funny to see how many responses I got when asking who would want the recipe. So here it is guys, enjoy and be sure to let me know how they turned out for you.
When I think of pretzels I think of all the holidays we spent in the US. My grandmother lives there, in Florida, so a lot of times we went there for holidays. Later on, I was able to travel to Georgia, San Francisco, New York, Niagara and everywhere you are able to find those nice and gooey pretzels. So I’ve had a little obsession going on with eating these whenever I get the chance.
It’s been on my to do list, not for a while, but for years to make these, but somehow I never had the balls to try. I finally did and man, super happy with the result. Savory and sweet are my favo combinations, so I made two different batches. It is a little bit of a process and requires some patience, but the moment you taste that original pretzel taste your going to be so happy. Believe me, just follow the steps and all will be well.
Instead of caramel dipping sauce, I made a Dulce de Leche one to dip these babies in.
3/4 cups warm water
1 tablespoon of light brown sugar
1/2 package active dry yeast (1 teaspoon more or less)
3 tablespoons unsalted butter, I melted mine in the microwave
1 1/4 teaspoons kosher salt
2 1/4 to 2 1/2 cups all-purpose flour
1.5 liter water
1/3 cup baking soda
1 whole egg, beaten with 1 tablespoon cold water (egg wash)
2 tablespoon sugar mixed with 1 teaspoon cinnamon
In a mixing bowl (I used a stand mixer), mix water, sugar, yeast, and butter with a dough hook. I put it on the lowest speed and mixed for a minute or 2 until everything was dissolved. Wait for about 5 minutes.
Now add in salt and flower. I added my flower while sifting it, so not all at once. Mix on the lowest speed until combined. Now move to medium speed.
Continue to kneading the dough till smooth and non sticky. It starts pulling away from the side of the bowl. Continue to do this for about 4 to 5 minutes.
Now its time to feel your dough and see if it is too sticky. If it is, add in one tablespoon of flower and mix until completely dissolved.
Check again and keep adding 1 tablespoon of flower until your dough is non sticky and you can lift it from the bowl in one go.
Remove your dough and kneed to a nice and firm ball.
In another bowl, add some vegetable oil (I used sunflower because of the soft taste) and add your ball of dough and turn it around a couple of times till everything is covered in oil and feels nice and smooth.
Cover with some foil and place in a nice warm spot for about an hour. Your dough should double in size. My little trick, is before starting, putting my oven on 50 degrees Celsius and when it reaches that temperature, I turn it off and place my dough there.
Flower your surface and take the dough and cut in to 8 smaller even pieces.
Your now ready to start rolling and boiling. Roll your dough and make long ropes and cut them into 2 cm pieces. They should look like little pillows.
While your rolling your dough, start boiling your water and slowly add in the baking soda so it won’t spill. My whole stove was covered in baking soda mess and you don’t want that.
Add in about 15 pieces of the bites and cook for about 30 seconds. Remove and add them to a well greased oven tray.
Bake them on 220 °C for about 5 -8 minutes. One by one baste with the egg wash and sprinkle with the cinnamon sugar mix. Instead of sugar, you can also sprinkle nice sea salt.
Bake for an additional 5-8 minutes. You need to check your oven, in my case it meant lowering my oven for the second time on 175 °C. They need to be golden brown.
